Tuna Salad

This was a super quick lunch and pretty good!!  Made a lot more than 2 servings though :)
Serves 2 - Fixate - 1/2 green, 1 red, 1/2 teaspoon

Ingredients:
2 (5oz) cans of light tuna, packed in water - drained
1 teaspoon EEOO
1 tablespoon dijon mustard
1 red pepper, chopped
2 tablespoons fresh tarragon

Combine and serve in a tomato :)
