Chicken in Wine & Mushroom Sauce

UM YUM!  Can that be it ?!  :)  You want to try both of these recipes....hmmm YUM!!  Ok so chicken dish - super good!!  I used chicken breasts, but this would be really good with chicken parts (I just used what we had on hand)!  The sauce with the raisins - awesome....I literally licked my plate clean (ask Ross...)  And I made this with the Broccoli with Sun Dried Tomatoes!
Chicken in Wine and Mushroom Sauce

Serves 3-4
Ingredients:
1lb chicken parts
1/4 cup flour
salt / pepper
2 tablespoon butter
1/2 cup onion, finely chopped
1 cup dry white wine
1 cup mushrooms, chopped
1/2 cup golden raisins
3/4 cup half and half cream
1 tablespoon parsley, chopped

Rinse and pat chicken dry.  Mix together the flour, salt, and pepper.  Dredge each chicken part in a light coating of the flour mixture.  Heat the butter in a large skillet over medium heat.  Add the chicken and cook until lightly browned.  Add the onion and cook until tender but not browned.  Add the wine and mushrooms, cover and simmer 30-35 minutes until the chicken parts are done. (should read 160 degrees on instant read thermometer)

Add the raisins and simmer covered 5 additional minutes.  Remove the chicken and place on a heated serving dish.  Add the cream to the skillet, heat, and pour over the chicken.  Garnish with chopped parsley.
