Green Chile & Cheese Corn Dip
Recipe adapted by Our Best Bites from Kelly White
Ingredients:
4 cans seasoned corn, drained
2 7-ounce cans green chilies
1 bunch green onions, chopped
1 cup mayonnaise (not Miracle Whip; light mayo is fine)
1 cup sour cream (not fat-free; light sour cream is fine)
2 cups shredded cheese (cheddar, pepeprjack, or Mexican blend)
Cajun/Creole seasoning (like Tony Chacheres) to taste
Jalapeño or Chipotle Tabasco sauce to taste
Optional: 6-8 slices bacon, crumbled
Optional: 1/4-1/2 cup pickled jalapeños, chopped
In a large bowl or serving dish, toss together the corn, green chilies, and chopped green onions. If desired, add crumbled bacon and pickled jalapeños. Add the mayonnaise, sour cream, and shredded cheese and stir to combine. Season to taste with Cajun seasoning (for heat and saltiness) and flavored Tabasco (for heat.) Cover and refrigerate for at least 4 hours. If desired, sprinkle with additional Cajun seasoning and/or crushed Fritos before serving. Serve with Fritos. Makes a lot.

Stuffed Pepper Casserole
Ingredients
- 1 pound ground beef
- 1 pound sausage I used Jimmy Dean breakfast sausage
- 2 cups cooked rice (cook as directed on the back of the box)
- 2 bell peppers diced
- 1 yellow onion diced
- 1 can Rotel
- 4 tablespoons Worcestershire
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 ounces tomato paste
- 1 cup mozzarella cheese optional
Instructions
- In a skillet, you will want to cook your ground beef and sausage in a skillet until crumbled and no longer pink. Drain off any excess grease.
- Now you will mix in your chopped peppers and onion, and saute for 2-3 minutes or until they soften just a bit.
- While meat is cooking cook up enough rice to make 2 cups of cooked rice.
- Once your peppers and onions cook down, add in your Rotel, Worcestershire, salt, pepper, and tomato paste. Turn heat to low and let it simmer for a bit until rice is cooked.
- Stir in your cooked rice. Pour into a 9x13 pan, or split into two 8x8 pans if you plan to freeze part.
- Top with cheese if you want, and bake at 350 degrees for 10 minutes or until cheese is melted.
- Dish up the stuffed pepper casserole for an easy weeknight dinner for the whole family.

Mexican Chicken Quinoa Casserole
1 tablespoon olive oil
1 yellow onion chopped
1 green bell pepper chopped
1 red bell pepper chopped
1 pound boneless skinless chicken breasts cut into bite-size pieces (about 2 large breasts)
1 tablespoon, plus 2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 teaspoon minced garlic about 2 cloves
1 can fire-roasted diced tomatoes (15 ounces) well drained
1 can black beans (15 ounces) , rinsed and drained
1 cup plain nonfat Greek yogurt
1/2 cup freshly grated sharp cheddar cheese divided
1/2 cup freshly grated mozzarella cheese divided
Fresh cilantro for serving

Chicken Enchilada Casserole
Made up some frozen meals for my Dad and Penny when they watched the boys, and this one was SUPER easy!!! Hope it tastes great :)
Ingredients
- 1 1/2 cups dry brown rice cooked according to package instructions
- 2 1/2 cups shredded chicken
- 2 cans 15 oz each black beans drained and rinsed
- 1 15 oz can green enchilada sauce (heat level of your liking, I usual do mild or medium)
- 1 15 oz can diced tomatoes
- 1/2 cup sour cream
- 1 teaspoon cumin optional
- 1/2 teaspoon salt
- Dash of pepper to taste
- 2 cups shredded cheddar cheese
Instructions
- Spray a dish (1- 9x13 inch baking dish or 2- 8x8 inch baking dishes or disposable pan(s)) with cooking spray.
- Cook rice and chicken and shred chicken (see note for cooking chicken)*
- Drain black beans
- In a bowl combine shredded chicken, enchilada sauce, tomatoes, black beans, sour cream, and seasonings
- Put rice at the bottom of the prepared baking dish, spoon chicken mixture on top of rice. Sprinkle the cheese on top.
- Freeze or bake, cooking instructions below.
- For baking from frozen, remove from freezer and bake at 350 degrees for 1 1/2 hours or until cheese is melted and center of the dish is warm.
- For baking right after prepared - bake at 350 for 30-35 minutes, until cheese is melted and starting to turn golden brown on top.

Carnitas (Mexican Pulled Pork)
3 1/2-4 pounds boneless pork butt roast (sometimes called boneless pork shoulder or boneless picnic roast)
2+ cups water (enough to cover the pork in the pot)
1 white or yellow onion, peeled and halved
4-6 cloves garlic, smashed and peeled
2 tablespoons lime juice (about 1 lime)
2 tablespoons red wine vinegar
1 teaspoon dry oregano
1 teaspoon ground cumin
2 bay leaves salt and pepper
1 orange
For serving: Small corn or flour tortillas, grated cheese (I like cotija cheese), Mint Pineapple Pico de Gallo, Pico de Gallo, Mango Pico de Gallo, Guac, sliced white onion, sprigs of cilantro, fresh lime wedges, etc.
Place the oven rack in the lower middle position and preheat the oven to 300 degrees.
Trim the pork of excess fat and cut into 2″ chunks. Place the pork in a heavy lidded pot like a Dutch oven. Add enough water to cover the pork and then add onion, garlic, lime juice, red wine vinegar, oregano, cumin, bay leaves, 1 teaspoon kosher salt, 1/2 teaspoon ground black pepper, and the juice from the orange. After squeezing the juice from the orange, toss the rinds into the pork mixture and stir to combine. Bring to a boil over medium heat, stirring occasionally.
Cover the pot and transfer to the oven. Cook for about 2 hours or until the pork falls apart when poked with a fork. When the pork is fork-tender, remove the pot from the oven.
Remove the orange rinds, onion, and bay leaves. Line a rimmed baking sheet with aluminum foil. Using a slotted spoon, transfer the pork from the liquid to the foil-lined baking sheet. Set aside.
Return the pot to the stovetop and bring the liquid to a boil over high heat. Boil for 8-15 minutes (longer or shorter if necessary) until the liquid is thickened and glaze-y and, when stirred, the spoon leaves a trail in the liquid (you should have about 1 cup of liquid).
Use your fingers to pull apart the pork pieces, discarding any particularly fatty pieces (or removing the fat from them). Drizzle with the cooking liquid. Turn your oven broiler on high and place the pork in the oven for 5-8 minutes or until the pork starts to brown and the edges become crispy.
Remove the baking sheet from the oven and use a spatula to flip the pork. Return to the oven for another 5-8 minutes, broiling until the pork is browned and crispy (but not charred, unless that’s your thing). Serve in warmed tortillas with desired toppings.

Real Taco Pie
Ingredients:
1/4 cup butter
2/3 cup milk
1 package taco seasoning mix (1 1/4 oz)
2 1/2 cups mashed potato flakes
1lb ground beef
1/2 cup chopped onion
1/2 cup BBQ sauce
1 cup shredded lettuce
1 medium tomato, chopped
1 cup shredded sharp cheddar (4oz)
Sour cream
Preheat oven to 350.
In a medium sauce pan, melt butter. Add milk and 2 tablespoons taco seasoning mix. Remove from heat and stir in potato flakes until incorporated. Press mixture over bottom and sides of 10" pan.
In a medium skillet, cook beef and onions until beef is browned and onions are tender. Drain off fat - and stir in remaining taco seasoning mix and BBQ sauce. Cook while stirring until bubbly, then pour into prepared potato crust.
Bake uncovered in oven for 30-35 minutes. Let cool for 5 minutes, and top with cheddar cheese, lettuce, and tomatoes. Cut into squares and serve with sour cream.
