Sweet and Sour Meatball Skewers

 This was really easy and super yummy!!!  The boys loved the meatballs :)

Ingredients

·       32 frozen fully cooked 1-inch meatballs, thawed (1 lb.)

·       1 red pepper, cut into 1-inch squares

·       1 green pepper, cut into 1-inch squares

·       1/4 cup apricot jam

·       1/4 cup barbecue sauce

Instructions

1.     Heat a grill to medium-high. Thread the peppers and meatballs alternately onto 8 skewers.

2.     Microwave the jam in a small bowl for 15 seconds. Add the barbecue sauce and stir to combine.

3.     Place the meatball skewers on the grill and brush with the sauce. Grill for 8-10 minutes, turning and basting with the sauce occasionally.

4.     Serve warm.

Wedge Salad on a Stick

 National food on a stick day -- this was delicious; stick or not :)

·      -4inch) wedges iceberg lettuce

·      2 strips cooked bacon, cut in half

·      4 grape tomatoes

·      4 bamboo toothpicks

·      1 tablespoon and 1 teaspoons blue cheese salad dressing

·      1 tablespoon and 1 teaspoons crumbled blue cheese, or more to taste

Thread each lettuce wedge, bacon piece, and grape tomato onto each toothpick, respectively. Arrange toothpicks on a serving platter. Drizzle 1 teaspoon blue cheese dressing over each and sprinkle with blue cheese.

Cheez-it Macaroni and Cheese

I thought this was delicious but the fam prefers to just Kraft with a side of cheezits hahahah

 

Ingredients

·       1 16 ounce box shells (or your pasta of choice)

·       ½ cup butter

·       ½ cup all-purpose flour

·       2 cups milk

·       16 ounces sharp cheddar cheese, shredded

·       ¼ teaspoon freshly ground pepper

·       2 cups Cheez-It crackers, crushed

Instructions

1.       Cook pasta to al dente according to package directions (you will be baking it later).

2.       Drain pasta and set aside.

3.       Melt butter in saucepan over low heat; whisk in flour, and cook, whisking constantly, 1 minute or until mixture is smooth.

4.       Increase heat to medium; gradually whisk in 2 cups milk, and cook, whisking constantly, 5 minutes or until mixture is thickened and bubbly.

5.       Stir in cheese, stirring until cheese is melted.

6.       Remove pan from heat.

7.       Stir pasta and ground black pepper into cheese mixture; spoon into a lightly greased 13 x 9 inch baking dish or a 3-quart casserole dish.

8.       Spread crushed Cheez-It crackers evenly on top.

9.       Bake uncovered at 375°F for 30 minutes or until thoroughly heated. Enjoy!

Tator Tot Hotdish

 It was National MN day so had to find a recipe that says MINNESOTA!!!!

Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion chopped
  • 1 - 14 ounce can corn drained
  • 2 - 11 ounce cans cream of mushroom soup
  • 2 pounds tater tots

Instructions

  • Preheat oven to 350 degrees F.
  • Brown ground beef and onion in a large skillet over medium-high heat. Once meat is starting to brown and is crumbly, remove from heat.
  • Either transfer meat mixture to a 9x13 casserole dish or keep it in the skillet if it is 12" diameter and oven safe. Top with corn, then cream of mushroom soup, then tater tots.
  • Bake in preheated oven for 45 minutes or until everything is heated through and tater tots are crisp on the outside.
