Marshmallow Cream Cheese Snack Dip

Love packing up fruit for the boat and needed something fun to mix it up today -- this is super easy to make and the kids just gobbled up all the fruit in seconds :)

Ingredients:
16oz Marshmallow Fluff
12oz whipped cream cheese
Dipper: Fruit, pretzels, graham crackers

Empty the marshmallow fluff and whipped cream cheese into a large bowl and mix together.  I used a handheld mixer but you can also use a standup mixer.
Notes
  • I sprayed my spatula with Pam cooking spray. This allowed me to easily remove the sticky marshmallow fluff from the container.
  • I used a really large bowl so I could more easily combine the two ingredients together and avoid giving myself a bath with the ingredients.
  • I used a 12 oz. container of whipped cream cheese so I didn’t have to worry about letting my cream cheese come to room temperature and soften. If you use the regular variety of cream cheese, I recommend you let it soften before using it. 
  • Feel free to use an 8 oz. container of cream cheese instead. It will just be a little milder of a cream cheese taste.

Roast Beef Tortilla Roll Up

I was looking for new recipes to bring on the boat, since picking up sandwiches gets kinda old....these roll ups were DELICIOUS!!  So easy too and all of my boys will eat it :)  Do it up!!!

Ingredients

  • 1 8oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup diced green onions
  • 1 1/2 teaspoons horseradish
  • 1 teaspoon yellow mustard
  • 1 cup colby jack shredded cheese
  • 1/2 pound shaved or thinly sliced deli roast beef
  • 3 burrito size flour tortillas

Instructions

  • In a small bowl, mix together cream cheese, sour cream, green onion, horseradish, mustard and cheese.
  • Spread 1/3 of cream cheese mixture on one tortilla.
  • Place 1/3 of roast beef on top of cream cheese layer. 
  • Roll tortilla very tight into a log and then wrap in cling wrap.
  • Repeat process with other two tortillas.
  • Chill in refrigerator for at least one hour before slicing.
  • Slice into 1 inch pieces with serrated knife.

Watermelon Margarita Recipe

This was DELICIOUS!!!  This is my perfect summer drink :)  The fresh watermelon juice is KEY!!

Ingredients

Watermelon Juice

  • 1 small seedless watermelon - or half of a large watermelon

Chili Salt Rim (optional)

  • 1 tablespoon ancho chili powder
  • 1 tablespoon kosher salt
  • 1 tablespoon granulated sugar or brown sugar

For One Margarita

  • 2 fluid ounces fresh watermelon juice
  • 1 fluid ounce fresh lime juice
  • 1.5 fluid ounces tequila
  • Lime - cut into wedges
  • Sliced watermelon - to garnish

Instructions

  • Prepare the watermelon juice - Fill a large blender with ripe, cubed watermelon and blend until juiced. At this point, you may wish to strain your blended watermelon through a fine-mesh strainer to remove any solids or leftover seeds (this step is completely optional and may depend on the efficiency of your blender). Note - the total amount of juice produced will far exceed that needed to make 1 margarita. Transfer leftovers to a mason jar and keep them stored in the refrigerator for a light and refreshing drink or margaritas later in the week.
  • Mix the chili salt - Add the chili powder, salt, and sugar to a shallow plate and mix together to combine.
  • Prepare your glass - Using your favorite cocktail glass (I used rocks glasses) run a lime wedge around the rim of each glass. Invert your glass and dip the top into the chili salt mixture, tilting the glass slightly to completely coat the surface. Fill each glass with ice and set them aside.
  • Make your margarita - To make your margarita, add 2 ounces of watermelon juice, 1-ounce lime juice, 1.5 ounces of tequila, and a scoop of ice to a cocktail shaker. Shake vigorously to combine and chill. Taste and adjust - does it need more watermelon juice? Lime juice? Sweetness? (see notes)
  • Serve - Strain your margarita into your prepared glass and garnish with a fresh lime wedge or chopped watermelon, if desired.

Notes

Should you use bottled lime juice? Bottled lime juice will work in a pinch, but the juice from fresh limes is always best (key limes are even better).
Save time: If you plan on making a big batch of margaritas, I highly recommend using a citrus juicer as they will really extract all the juice from all those tasty limes.
What tequila is best? There are two main categories of tequila sold - mixtos and 100% agave. When shopping for tequila, you always want to buy 100% Blue Agave Tequila. For this particular recipe, I used silver tequila, also known as Blanco tequila, but feel free to use your favorite.
Make a sweeter margarita: Add a teaspoon or two of your favorite sweetener (agave, honey, simple syrup). You can also add 1/2-1-ounce of triple sec or Cointreau, an orange-flavored liqueur.
  • 1 ounce = 2 tbsp

How to Pick a Good Watermelon?
  • Pick one that feels heavy for its size.
  • Look for the yellow spot where the watermelon was resting on the ground. It should be a creamy, yellowish color and found on only one side of the watermelon.
  • Look for sugar spots and pollination points. Sugar spots are areas on a watermelon where sugar has seeped through. Pollination points are usually found in the same area as sugar spots. They're brownish rough patches with dark brownish/black dots in rows. These ugly-looking patches on watermelon are actually good things!
  • Tap your watermelon. Does it sound hollow? Good.

Boat Dip

Headed out on the boat with friends so needed an easy and yummy app to bring!!  This was delicious!!  Served this with pretzels, fritos, peppers, or scoops!!
Ingredients
  • 16 oz sour cream
  • 1 packet taco seasoning
  • 1 10 oz can rotel diced tomatoes and green chiles drained
  • 2 cups shredded cheddar cheese
  • 2 tbsp chopped fresh cilantro leaves
  • Serve with: Pretzels, Fritos, chopped peppers, scoops

Add all of the ingredients to a medium sized mixing bowl.

Stir everything together until evenly combined.

Cover and chill.

Serve cold with dipping options of your choosing.

Mini Doritos Cheese Balls

I was having some friends over for a bonfire so I needed some easy apps for around the fire.  These were surprisingly delicious and super easy to make :)  Great idea for a bonfire or boat app!

Ingredients
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon taco seasoning
  • 1/2 cup crushed Doritos
  • Rold Gold Pretzels Sticks for serving

Add softened cream cheese, shredded cheddar and taco seasoning to a small bowl and stir until well combined.

Scoop into about teaspoon- sized balls and roll in crushed Doritos.

Serve immediately or store in an airtight container until ready to serve.

Add Rold Gold Pretzels Sticks into each mini cheese ball for easy serving.

Feta Fruit Bites

I was having some friends over for a bonfire so I needed some easy apps for around the fire.  These were surprisingly delicious and super easy to make :)  Great idea for a bonfire or boat app!!

Ingredients
Fresh strawberries, sliced in half or quarters (depending on size of strawberries)
Feta cheese, cut into small cubes
Honeydew melon, cut into small cubes
Juice from fresh lime or lemon
For serving, toothpicks or short skewers
Take cubed fruit and feta cheese and assemble in layers, securing with a toothpick or short skewer. Drizzle with lime juice and enjoy!
