Ingredients
1 stick butter
1/3 cup onions
½ cup flour
1lb velveta
2 cups milk
2 cups chicken broth
4 medium potatoes
1-2 carrots
1/3 cup celery
1-2 cup frozen mixed veggies
Saute 1 stick butter and 1/3 cup onions
Add ½ cup flour – stir until thickened
Add 2 cups milk, 1lb Velveeta, 2 cup
chicken broth
Stir frequently over medium heat. Heat
until Cheese is solft
Cook until almost soft – 4 medium potatoes
(cubed), 1-2 carrots, 1/3 cup celery, 1-2 cup frozen mixed veggies
Drain veggies and add to mixture – add
salt and pepper. Add 1-2 teaspoon mustard. Stir frequently and
simmer
If soup gets thick, add a little milk or
chicken broth
