Fruity Quinoa Salad


1 yellow, 2 purple
Ingredients:
1 cup cooked quinoa
½  cup fresh blueberries
½  cup fresh strawberries
½  cup mandarin oranges
½  cup mango chunks
2 tablespoons olive oil
Juice of 1 lime
1 teaspoon honey
1 tablespoon fresh chopped mint leaves

Combine the quinoa with the fruit in a large bowl.

Stir to combine.

Put the olive oil, lime juice and honey in a jar with a lid and shake.

Toss with the salad


Sprinkle on the fresh mint leaves.

Sweet Potato and Beef Stew

This was sooo yummy!!!  Little time consuming being that it has to gently boil for 2 hours BUT perfect for a Sunday afternoon :)

Serves 6 - 1/2 green, 1/2 yellow, 1 1/2 red

Ingredients:
1 teaspoon olive oil
1lb 10oz raw lean beef stew meat
1 medium onion, chopped
1 medium carrot, chopped
4 cloves garlic, finely chopped
8 cups low-sodium organic beef broth
1/2 cup red wine
1/4 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon ground smoked paprika
3 bay leaves
2 medium tomatoes, chopped
2 large sweet potatoes, cut into 1 inch pieces
2  teaspoons corn starch
lukewarm water

Heat oil in large sauce pan over medium-high heat.

Add stew meat; cook, stirring frequently, for 4-5 minutes. or until browned.

Add onion, carrot, celery; cook - stirring occasionally for 5-6 minutes, or until onion is translucent.

Add garlic; cook for a minute.

Add 1 cup broth and wine; cook stirring constantly, scraping bottom of pan so beef doesn't stick, for 5-8 minutes or until liquid has almost completely evaporated, and tomatoes begin to break down.

Add remaining 7 cups broth.  Bring to a boil over medium-high heat.  Reduce heat, gentle boil, for 2 hours stirring occasionally.

Add sweet potatoes, cook for 20-25 minutes or until they are tender.

Combine cornstarch and water in a small bowl, whisk to blend.  Add to stew; cook stirring constantly for 2-3 minutes or until stew has thickened slightly.

Parmesan Chicken

So good and oh so easy!!!
1 red, ¼ yellow, 1/4 blue

  
Ingredients
2 pounds chicken breasts, boneless and skinless
1/4 cup gluten free bread crumbs or whole wheat panko crumbs (not gluten free)
2 tbsp fresh grated Parmesan cheese
2 egg whites
1/4 tsp sea salt
1/8 tsp black pepper
1/8 tsp lemon pepper
1/8 tsp oregano

Preheat oven to 350 degrees f.

Break open eggs into a shallow dish and scramble well.

In a medium mixing bowl, combine bread crumbs, parmesan cheese, sea salt, black pepper, lemon pepper and oregano.

Dip each side of chicken breast into the egg and then into bread crumb mixture.

Place in a large baking dish.


Bake at 350 degrees for 45-55 minutes, or until the internal temperature reaches 165 degrees F.

Mini Meatloaf with Steamed Vegetables

Yummy!!  So good as leftovers too -- the baby red mashed potatoes was a WIN too!!
Serves 4: 1 red, 1.5 green1 yellow

Ingredients:
1 lb. Ground Turkey
1⁄2 Onion, chopped
1⁄2 cup Green/Yellow/Red pepper chopped (I sneak this in for flavor in small pieces so the kiddos don’t notice!!)
2 Eggs
1⁄2 cup Oats 
1⁄4 cup organic, no salt/sugar added Tomato Sauce 
1 clove Garlic minced 
Oregano leaves, parsley, pepper to taste 

Mix all ingredients. Fill greased muffin tins evenly. Bake at 400 degrees for 35­40 Minutes!!

Small serving of mashed baby red potatoes. (I like to boil the with a clove of minced garlic then mash with 1⁄4 cup milk when cooking for the family. Then I top mine with a little plain greek yogurt! Even the kiddos love it this way!) 

Steamed Vegetables (anything you prefer!! My go to is broccoli and carrots! You can also do asparagus, green beans, spinach etc. Whatever you have or whatever everyone will eat is my motto!)

Chicken Sausage Saute

I was craving anything but this tonight but wanted to stay on plan -- and Wow.  This was soooo good!!  Super easy too!!  Kiddos loved it as well!

Ingredients
2 sweet potatoes
Aidells chicken sausage (or brand of choice)
2-4 zuchinni (pending on size)

Slice chicken sausage, Slice zuchinni, Slice sweet potatoes.

Heat pan to medium heat. Pour 1 tsp olive/coconut oil in. Saute sweet potatoes. Add zuchinni and chicken sausage until heated through.

REESE'S CUP OATMEAL

I'm not a huge fan of oatmeal so always looking for new ways to make it :)
Serves: 2 servings (1.5 yellow, 2 teaspoons)
INGREDIENTS
1½ cups almond milk
¼ cup water
1 cup steal cut oats
2 teaspoons honey
4 teaspoons almond butter
3 teaspoons cocoa powder
1 pinch salt

Bring the almond milk and water to a boil in a medium pot.  When boiling, add the oatmeal.

Reduce the heat to medium, cover, and let cook for 5 minutes, turn off the heat, and let the oatmeal sit - covered - for another 3 minutes (or follow your package instructions if they are different).

Place the cooked oatmeal in a bowl, and stir in the honey, almond butter, cocoa powder, and salt

Ground turkey tacos & Cauliflower Rice

This was AMAZING!!!  I always get sad when I have to waste a yellow (starch/carb) on rice with my burrito bowl / tacos, but found the perfect sub -- cauliflower rice!!!  You can't even tell you are eating a veggie -- so so so so good!!
Serves 4 (21 Day Fix breakdown: 1 red, 1 green, 1 yellow)

Ingredients:
1lb turkey (add only 2 tablespoons of seasoning)
Peppers
Shredded cheese
Avocado
Greek yogurt
Corn

Taco Seasoning
INGREDIENTS:
2 teaspoons chili powder
1.5 teaspoons paprika
1/5 teaspoons cumin
1 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon sea salt
Dash of cayenne to your preferred level of heat

Combine all of the ingredients in a small bottle or jar. Stir or cover and shake to combine.

Cilantro Lime Cauliflower Rice – 1 green

INGREDIENTS:
1 Head of cauliflower or cauliflower crumbles
1 Lime
2 Tsp chopped garlic (fresh or from a jar)
Chopped cilantro

Chop Cauliflower (or pour crumbles from bag and chop to desired size).  Toss in pan with Garlic, stirring constantly until toasted. About 5 minutes.  Toss in cilantro and lime
