Chicken Fried Rice

Makes 4 Servings - A serving size is 1 Green container filled with the completed fried rice
1.5 Red, 1 Green1 Yellow

Ingredients:
2 large egg whites
1/2 cup sliced green onion
12 oz boneless skinless chicken breast, cut into bite sized pieces.
2 cups cooked brown rice
1/2 cup frozen green peas
Olive oil cooking spray
2 cloves garlic, minced
3 Tbs Bragg's liquid Aminos, Coconut Aminos, or low-sodium soy sauce

In a medium bowl, whisk eggs. Coat a large nonstick skillet with cooking spray and place on medium-high heat. Add eggs and cook, stirring and breaking up egg until cooked through, about 4 minutes. Transfer to plate, set aside and keep warm.

Wipe skillet and coat with additional cooking spray; return to medium-high heat. Add onion and garlic and sauté, stirring occasionally, for 2 minutes, until onion turns translucent. Add chicken and cook, stirring, until no longer pink inside, about 5 minutes.

Stir in egg, rice, peas and soy sauce. Cook, stirring occasionally, until heated through, 1 to 2 minutes.

Turkey Roll Up

Sorry didn't take a pic :)  It basically just looked like a wrap :)

Ingredients:
4oz nitrate free deli turkey (1 red)
1 piece high quality cheese (1 blue)
Romaine lettuce (1 green)
brown mustard (free!)
1 whole wheat wrap (1 yellow)

Shakeology: Vanilla

Shakes are pretty easy to make, so I won't keep posting every one I make -- I'll probably just do my favorite "go to" ones...BUT this first week, I'm just experimenting :)


STRAWBERRY VANILLA
This one was pretty good - I drank every last drop!

Ingredients:
Vanilla shake mix
1c strawberries
1c unsweetened almond milk
Ice


VANILLA / BERRY
This wasn't too bad - I drank every last bit, but it was a little thicker than I like....might not put any ice in next time since it already has the frozen berries in it.

Ingredients:
Vanilla shake mix
1c frozen berries
1c water
Ice


CHOCOLATE CHIP COOKIE DOUGH
This was pretty good, but I"ll admit - I was a little disappointed...it didn't really taste like it -- haha.  I'll stick with my snickerdoodle!

Ingredients:
Vanilla shake mix
1c unsweetened almond milk
1 teaspoon raw honey
1 teaspoon pure vanilla extract
1 teaspoon chocolate chips
Ice


BANANA CREAM PIE
I didn't really taste the banana cream pie, but this was still good!!

Ingredients:
Vanilla shake mix
1c unsweetened almond milk
1/2 frozen banana
1/4 cup oats
1/2 teaspoon cinnamon
ice

BLUEBERRY MUFFIN
This was really good - I'm not always a fan of snacking on blueberries, so this was a nice treat to get it in a shake.  Really did taste like a blueberry muffin too :)

Ingredients:
Vanilla shake mix
1c unsweetened almond milk
1/2 cup blueberries
1 handful dry rolled oats
1 pinch cinnamon
Ice

PEANUT BUTTER AND JELLY
This was really good - as long as you cut the grapes beforehand so they don't leave chunks once blended!

Ingredients:
Vanilla shake mix
1 cup liquid (water or unsweetened almond milk)
1/4 cup red grapes
2 teaspoon peanut butter
ice

CINNAMON ROLL
Another FAV!!!  This was so yummy!!  I just inhaled this whole thing :)

Ingredients:
Vanilla shake mix
1 teaspoon vanilla extract
1 teaspoon almond butter
1 cup unsweetened almond milk
1 teaspoon cinnamon
8 ice cubes
1 teaspoon honey
1 banana

SNICKERDOODLE
FAV!!  This was sooooo yummy!!  I think it would be really good for afternoon snack too -- since it's like dessert!  I'll be making this one lots!

Ingredients:
Vanilla shake mix
1 frozen banana
1c unsweetened almond milk
1/4 tsp baking soda
1/2 tsp pure vanilla extract
1T peanut butter
Ice

Shakeology: Strawberry

This was the first one I didn't really like...I thought it was going to be so yummy but it had a really weird taste...

STRAWBERRY LEMONADE
Ingredients:
Strawberry shakeology mix
1 cup water
2T fresh lemon juice
1tsp pure maple syrup
Ice

**This was ok...I finished it all but it wasn't my favorite and didn't really taste like lemonade!**

STRAWBERRY BASIL DELIGHT
Ingredients:
Strawberry shakeology mix
1 cup water
1T fresh lime juice
1/4 cup fresh basil
Ice

**I'm still trying to find a strawberry shake I like...this was "eh".  I could taste the powder still, but the basil was kinda a nice kick to it**


STRAWBERRY CHEESE CAKE
Ingredients:
Strawberry shakeology mix
2 tablespoons sugar and fat free cheesecake jello
1 cup unsweetened almond milk
1 1/2 cups water
ice

**This was pretty good!!  Wasn't my favorite...BUT it was better than the other ones I've tried**

Gma Green Apple Crisp

My first family recipe I didn't have my Mom to call for :(  Thank you Auntie Barb for passing it down a generation!!  Let's just say making this was very hard...everything about it reminded me of my Mom.  From picking apples at the orchard, to peeling/slicing, to the yummy taste.  N-Ron loved herself some apple crisp...man, I miss her.
Recipe by: Grandma Green

Ingredients:
Apples
3/4c brown sugar
3/4c flour
1/2c butter (do not melt)
cinnamon

Peel/core apples and slice enough apples thinly for the pan size you want 8x8 or 9x13  (I used about 6 apples for 8x8 and it was pretty thick bottom)
I slice them thin then put them on the bottom, kind of layered so they cover the bottom. Then I do another level or 2 because I like it a little deeper. Just not too deep that the apples don't get soft.

Mix brown sugar and flour - then cut the butter into dry ingredients and add a few shakes of cinnamon (I put quite a bit in but do to your own taste).  Sprinkle this over apples and pat down.

Bake 350 for 45 minutes - It will brown on top.

Cool and serve with ice cream on top. Enjoy!!

 He actually liked it so much that he asked to make another one -- so YAY!!  Toddler busy and dinner got made :)

Tissue Paper Apple

September is here and it's time for APPLES!!!

Red tissue paper
Card Stock
Glue
Brody was still a little too young to use the scissors...

BUT him and Evan did great ripping the tissue paper :)

Then it's just glue and stick!
