Fajita Pasta

This was delicious!!  We all just killed it!!

Ingredients
1 pound spinach fettuccine noodles
1 yellow bell pepper, sliced
1 red bell pepper sliced
1 green bell pepper, sliced
1 purple onion, sliced
2 garlic cloves, chopped
1 jalapeño, chopped
2 tablespoons unsalted butter
2 teaspoons salt
1 teaspoon black pepper
1 pound boneless skinless chicken breasts, chopped
1/4 cup fresh cilantro
2 cups chicken stock
1/3 cup heavy cream
1/4 cup parmesan cheese (optional)

Instructions
  1. Add all of the ingredients (except for the heavy cream and parmesan. Cover, bring to a simmer and cook until the chicken has fully cooked through and the noodles have softened, about 25 minutes.
  2. Stir in the cream and parmesan cheese and serve immediately.
