Ingredients:

1.5–2 lbs chicken thighs or drumsticks

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp garlic powder (or 2 cloves minced garlic)

1 tsp dried rosemary or thyme

Juice of 1 lemon
Instructions:

Preheat oven to 400°F (200°C).

Mix olive oil, lemon juice, and seasonings in a bowl.

Rub mixture all over chicken and let marinate for 15–30 minutes if you have time.

Place on a baking sheet or in a baking dish.

Roast for 35–45 minutes until golden and cooked through (internal temp 165°F).

Serve with a wedge of lemon and fresh herbs if desired.
