Parmesan Chicken

So good and oh so easy!!!
1 red, ¼ yellow, 1/4 blue

  
Ingredients
2 pounds chicken breasts, boneless and skinless
1/4 cup gluten free bread crumbs or whole wheat panko crumbs (not gluten free)
2 tbsp fresh grated Parmesan cheese
2 egg whites
1/4 tsp sea salt
1/8 tsp black pepper
1/8 tsp lemon pepper
1/8 tsp oregano

Preheat oven to 350 degrees f.

Break open eggs into a shallow dish and scramble well.

In a medium mixing bowl, combine bread crumbs, parmesan cheese, sea salt, black pepper, lemon pepper and oregano.

Dip each side of chicken breast into the egg and then into bread crumb mixture.

Place in a large baking dish.


Bake at 350 degrees for 45-55 minutes, or until the internal temperature reaches 165 degrees F.

Mini Meatloaf with Steamed Vegetables

Yummy!!  So good as leftovers too -- the baby red mashed potatoes was a WIN too!!
Serves 4: 1 red, 1.5 green1 yellow

Ingredients:
1 lb. Ground Turkey
1⁄2 Onion, chopped
1⁄2 cup Green/Yellow/Red pepper chopped (I sneak this in for flavor in small pieces so the kiddos don’t notice!!)
2 Eggs
1⁄2 cup Oats 
1⁄4 cup organic, no salt/sugar added Tomato Sauce 
1 clove Garlic minced 
Oregano leaves, parsley, pepper to taste 

Mix all ingredients. Fill greased muffin tins evenly. Bake at 400 degrees for 35­40 Minutes!!

Small serving of mashed baby red potatoes. (I like to boil the with a clove of minced garlic then mash with 1⁄4 cup milk when cooking for the family. Then I top mine with a little plain greek yogurt! Even the kiddos love it this way!) 

Steamed Vegetables (anything you prefer!! My go to is broccoli and carrots! You can also do asparagus, green beans, spinach etc. Whatever you have or whatever everyone will eat is my motto!)

Chicken Sausage Saute

I was craving anything but this tonight but wanted to stay on plan -- and Wow.  This was soooo good!!  Super easy too!!  Kiddos loved it as well!

Ingredients
2 sweet potatoes
Aidells chicken sausage (or brand of choice)
2-4 zuchinni (pending on size)

Slice chicken sausage, Slice zuchinni, Slice sweet potatoes.

Heat pan to medium heat. Pour 1 tsp olive/coconut oil in. Saute sweet potatoes. Add zuchinni and chicken sausage until heated through.

REESE'S CUP OATMEAL

I'm not a huge fan of oatmeal so always looking for new ways to make it :)
Serves: 2 servings (1.5 yellow, 2 teaspoons)
INGREDIENTS
1½ cups almond milk
¼ cup water
1 cup steal cut oats
2 teaspoons honey
4 teaspoons almond butter
3 teaspoons cocoa powder
1 pinch salt

Bring the almond milk and water to a boil in a medium pot.  When boiling, add the oatmeal.

Reduce the heat to medium, cover, and let cook for 5 minutes, turn off the heat, and let the oatmeal sit - covered - for another 3 minutes (or follow your package instructions if they are different).

Place the cooked oatmeal in a bowl, and stir in the honey, almond butter, cocoa powder, and salt

Ground turkey tacos & Cauliflower Rice

This was AMAZING!!!  I always get sad when I have to waste a yellow (starch/carb) on rice with my burrito bowl / tacos, but found the perfect sub -- cauliflower rice!!!  You can't even tell you are eating a veggie -- so so so so good!!
1 red, 1 green, 1 yellow

Ingredients:
1lb turkey (add only 2 tablespoons of seasoning)
Peppers
Shredded cheese
Avocado
Greek yogurt
Corn

Taco Seasoning
INGREDIENTS:
2 teaspoons chili powder
1.5 teaspoons paprika
1/5 teaspoons cumin
1 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon sea salt
Dash of cayenne to your preferred level of heat

Combine all of the ingredients in a small bottle or jar. Stir or cover and shake to combine.

Cilantro Lime Cauliflower Rice – 1 green

INGREDIENTS:
1 Head of cauliflower or cauliflower crumbles
1 Lime
2 Tsp chopped garlic (fresh or from a jar)
Chopped cilantro

Chop Cauliflower (or pour crumbles from bag and chop to desired size).  Toss in pan with Garlic, stirring constantly until toasted. About 5 minutes.  Toss in cilantro and lime

Honey Sesame Chicken in Crockpot

Ok this was AMAZING, EASY, and NO PREP!!  Doesn't get much better than that!!
Serves 4: 1 red, 1 green1 yellow

Ingredients
4 cloves of garlic
1 large onion
4 big chicken breasts
1 cup honey
1/2 cup tomato paste
1 cup soy sauce
Salt and pepper to taste
2 cup of rice, cooked

Put it all in the crock pot on low for 4-5 hours. Shred chicken, add in sesame seeds and serve on top rice.

Lemon Garlic Chicken Pasta

Um, am I cheating?!  This was DELICIOUS for a perfect summer evening.  So yummy!!!
Serves 4: 1 red, 1 green1 yellow
Ingredients:
4 Chicken Breasts cut into 1” cubes 
8 oz Whole Wheat Linguine (you may substitute whole wheat spaghetti or zucchini noodles) 
1 cup Loose leaf parsley (fresh not chopped) 
1⁄2 cup Spinach 
1 cup zucchini sliced 
1 Clove garlic minced 
3 Tbs olive oil 
1 Lemon (juiced) 
Grated parmesan cheese (optional) 

Cook pasta accordingly.

Put 1 Tbs olive oil into large Saute pan on medium heat. Once heated add chicken and cook until browned on all sides. Add zucchini and cook for 5 minutes. Add tomatoes, spinach and parsley. Set aside on low heat stirring occasionally.

In small bowl whisk together 2 Tbs olive oil, juice of one lemon and minced garlic. 

Drain and rinse pasta. Add to chicken mixture. Add lemon garlic sauce and mix. Top with parmesan cheese!! Enjoy!!

1 yellow½ blue, 1 red1 green
Ingredients:
Small Wrap
Hummus
Turkey or rotisserie chicken
Assorted veggies (spinach, shredded carrots, diced cucumber, bell pepper)

Spread wrap with hummus – top with Turkey or rotisserie chicken and assorted veggies

Chicken Kabobs

Love this time of year cause it means GRILLING!!!  These were so good!!
(1 red, ½ green, ½ purple)
Ingredients:
1lb of chicken breasts – cut into 1 inch cubes
1 medium red bell pepper -- cut into 1 inch chunks
½ large red onion -- cut into 1 inch chunks
1 (8 oz can) pineapple chunks in juice

MARINADE:
1/4 cup liquid aminos, low sodium soy sauce or tamari
2 tsp sesame oil
2 tsp fresh ginger

Marinade chicken for at least 30 minutes – then make your kabobs and grill

Stromboli

 OMG this was good -- I impressed myself with this and I couldn't believe it was clean!!
Serves 6: 1 serving = 1/6 of loaf (1 yellow1 red½ green½ purple, 1 blue, 1 tsp)


Ingredients
1 loaf frozen bread dough
2 egg yolks
2 T olive oil
1 T parmesan cheese
1 tsp dried oregano
1 tsp basil
½ tsp garlic powder
2 cups mozzarella cheese
Fillings: Meat (4 cups) or Veggies (3 cups) -- Can use ground turkey, ground beef, spinach, mushrooms, etc

Thaw bread dough and let rise according to directions.  Spread dough on greased cookie sheet in large rectangle.  Mix egg yolks, oil, parmesan cheese and spices.  Spread on dough.  Add mozzarella cheese and fillings on top w/long edge.  Press seam together and place seam side down. Brush w/egg whites.  Bake for 30-40 minutes at 350 degrees.  Serve with ½ cup pizza sauce:

15 oz. tomato sauce
1 tsp oregano
1 tsp basil
½ tsp garlic powder

Chicken & Bean Enchiladas

um this was amazing and SO easy to make!!!  Ross said it was the best enchiladas he ever had!!!
1 serving = 1 enchilada (1 yellow1 red1 blue)

Ingredients
2 15oz. cans of black beans
2 teaspoons chili powder
1 teaspoon ground cumin
1 tablespoon of diced jalapenos
1 pound of cooked boneless skinless chicken breast, diced
8 tortillas
1 cup of salsa
1 cup shredded Monterey Jack Cheese
Chopped lettuce and Greek yogurt for topping

Preheat oven to 400°. Spray a shallow baking dish with non-stick spray!

Use a food processor to combine the beans, chili powder, cumin, and jalapenos. Blend the mixture until it's almost smooth - but still a little chunky.

Divide the mixture between your tortillas and spread it down the center of each one. Top with the chicken. Roll up each tortilla and place them seam-side down in the baking dish, side by side.

Top with salsa, shredded cheese, and green onions (optional). Cover with foil and bake for 20 minutes. Uncover and bake for 10 more minutes.

Pot Roast

I'm a sucker for crock pot meals, and this was so easy and yummy!!
Measure 1 serving using red for roast, yellow for potatoes, and green for carrots.

Ingredients
3# beef roast
2# carrots
1# Red Potatoes
1 Tbsp corn starch
2 Tbsp steak seasoning
1 Tbsp kosher salt
1 Tbsp dried rosemary
½ tsp dried thyme
1 cup beef broth

Combine seasonings.  Sprinkle 1/3 on meat and sear.  Drizzle olive oil on veggies, coat and mix with seasoning.  Saute 5 minutes.  Place meat in slow cooker, cover with veggies, add broth.  Cook 9 hours on low or 6 hours on high.
